Finally made something out of this star-studded cookbook I got at a used bookstore in town. Nick Stellino is a Public Television food host of Cucina Amore. This is his hummus recipe. I do like it. It definitely has more kick than mine. I really do like it. I need to start adding spice to mine. This will be a good variation from my roasted red pepper hummus - and so much cheaper than buying it - anywhere.
1 can chickpeas, drained
juice of one lemon
1/4 cup tahini
2 T hot water
1/2 tsp salt
2 cloves, garlic
1/8 tsp cumin
1/8 tsp red pepper
olive oil to taste and texture
Combine all in a food processor - puree till you get the texture you want. So easy - I enjoy mine with carrots, celery, and sometime pita chips!
